Chicken kofta

Chicken kofta is a flavorful and delicious dish that is popular in countries like India, Pakistan, and the Middle East. The combination of ground chicken blended with aromatic spices, fresh herbs, and crispy exterior makes it a mouthwatering treat. The koftas are juicy and tender on the inside, while the outer layer offers a delightful crunch. The aromatic spices used in the recipe add depth of flavor, making it an irresistible dish for both meat lovers and spice enthusiasts. Whether enjoyed as an appetizer, main course, or snack, chicken kofta is sure to leave you craving for more.


Ingredients:

- 500 grams ground chicken

- 1 small onion, finely chopped

- 2 cloves of garlic, minced

- 2 tablespoons fresh cilantro, chopped

- 2 tablespoons fresh mint, chopped

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- 1/2 teaspoon chili powder (adjust according to taste)

- Salt and pepper to taste

-4 tablespoons of bread crumbs

- Oil for frying




Add in the ground chicken, onion, garlic, fresh herbs, and spices. Add , salt, and pepper, breadcrumbs then mix until thoroughly combined

Using your wet hands, take a spoonful of mixture and make it into an oval patty. Stick a bamboo skewer into the middle and continue to gently shape it into a log. Repeat with the remaining mixture.

Refrigerate the kaftas until ready to cook. Heat a gas grill or a grill pan over medium heat. Grease with some oil to prevent the kaftas from sticking


Cook kaftas for 4-5 minutes per side, until cooked through and nicely charred.

Serve with fattoush salad if desired and enjoy


Notes:

  • Use Lean ground chicken if possible.

  • Use fresh ingredients where possible. It is important to use fresh cilantro as that’s what brings out the kafta flavor.

  • You can easily sub the whole wheat bread for breadcrumbs. If your ground chicken is not too lean then you can cut back on the breadcrumbs and use only half the amount.

  • Wet your hands with water or oil when adding the chicken kafta to the skewers. This is because it might be a bit sticky and it just makes things easier.

  • Do place the chicken kafta in the fridge
