Roqaaq means thin layers, it's really crispy thin bread not thicker than 1 mm,
Baked beef Roqaq is a popular dish in Egypt especially in occasions or having friends or family for dinner, it's layers of thin crispy bread dipped in any kind of broth then stuffed with a layer of beef filling then baked. The best broth to use in this recipe is duck broth, it gives a unique delicious flavor. Contrary to what some people think this dish is so easy and quick to prepare.
Ingredients:
350 gm ground beef cooked .
8 layers of Crispy Roqaaq
big tomato, chopped
big bell pepper, chopped
2 tbsp milk
Chicken, beef, or duck broth
Directions:
1- Prepare the ground beef filling first like the recipe add chopped bell pepper stir then set aside.
2- Preheat the oven 180c, then place the broth on low heat in a wide pan to dip in Roqaq (we want it hot but not boiling), and prepare the baking tray an grease with purified butter.
3- Dip 5 to 6 layers of Roqaaq and place in the baking tray on top of each other, we want it to absorb some broth but not mushy check the photo below.
4- After first 5 to 6 layers add beef filling evenly on top of them.
5- Repeat step 3 with the rest of Roqaq and place on top of beef filling .
6- Place into the oven for 15 minutes approx. then out of the oven, mix 2 sppon of ghee and milk and 2 tbsp of broth then sprinkle evenly over top of Roqaq then back to the oven for about 10 minutes or till golden brown.
7- Out of the oven, rest for 3 minutes then cut again and place in the serving plate .
