Stuffed Grape Leaves,

These grape leaves are stuffed with a tantalizing mixture of lemony rice and fresh herbs. "Yum" is the only word to describe them! Serve them as an appetizer, or as a main dish paired with crusty bread and a Greek salad.

2. In a bowl, combine the rice, onions, dill, mint, parsley, lemon juice, olive oil, salt, and pepper. Mix well.

3. Place a grape leaf on a flat surface, shiny side down. Trim off the stem if necessary.

4. Spoon about a tablespoon of the rice mixture onto the center of the leaf.

5. Fold the bottom of the leaf over the filling, then fold in the sides, and roll it up tightly.

6. Repeat the process with the remaining grape leaves and filling.

7. Place the stuffed grape leaves in a pot, seam side down, in a single layer.

8. Add enough water or vegetable broth to cover the stuffed leaves.

9. Cover the pot and bring it to a boil. Reduce the heat and simmer for about 45 minutes to 1 hour, or until the rice is tender.

10. Once cooked, remove from heat and let them cool before serving.
