Tajin Bamia with meat

Ingredients:

- 500g fresh okra (bamia)

- 1 onion, finely chopped

- 3 cloves of garlic, minced

- 2 tomatoes, diced

- 2 tablespoons tomato paste

- 2 tablespoons vegetable oil

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- 1/2 teaspoon ground turmeric

- Salt and pepper to taste

- Juice of 1 lemon

- Fresh coriander for garnish (optional)



Procedure:

1. Wash the okra and trim the ends. If the okra is large, you can cut it into halves.

2. In a large pan, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic. Then add the meat. Sauté until they become translucent.

3. Add the diced tomatoes and tomato paste to the pan. Stir well to combine.

4. Add the ground cumin, ground coriander, ground turmeric, salt, and pepper. Mix everything together.


6. Reduce the heat to low, cover the pan, and let it simmer for about 20-25 minutes, or until the meat becomes tender.


5. Gently add the mixture to the okra in the tajin (clays pot) coat them with the tomato mixture.



8. Once the okra is cooked, remove the tanin from oven and drizzle the taqliaa (tashaa) which is fried diced galic in ghee then lemon juice is added to it when color turned golden)over the dish.

9. Garnish with fresh coriander if desired.

10. Serve Tajin Bamia hot with rice or bread.
